Mulgi puder is a farmhouse dish from southern Estonia’s Mulgimaa region. Pearl barley cooks with potatoes into a substantial mash traditionally finished with onions and often bacon.

Estonian mulgi puder combines potatoes and pearl barley in a hearty mash finished with browned onions.
Simmer barley in water for 25 minutes, partially covered.
Add potatoes and salt; simmer 18–22 minutes until both potatoes and barley are tender.
Meanwhile, cook onions in butter over medium-low heat until deep gold, about 18 minutes.
Drain excess water if needed. Mash potatoes lightly around the barley, beat in warm milk and pepper, and top with onions.
